The published installer is the APEX-OS v2.1.0 network installer. It installs the signed system image and needs a connection while it runs. Its first update needs one manual step.

rimeos.com draws its bar and its colours with Rime Shell's own code, pinned to a Shell revision, and refuses to build when that code drifts or to write palettes the Shell would not produce. Its demo desktops are now recordings of the real Shell.
